Kidders Salad

In this country we tend to think lettuce or greens when we make salads. This salad is a traditional side in Northern Italy. The peppercorns of Kidders nicely compliment the celery and walnuts. It makes a nice winter salad.

(serves 4 people)

5-6 stalks of celery
10 oz of Kidders cheese
4 oz of chopped walnuts
Extra virgin Olive oil
Salt
Lemon Juice
Wash and cut in small cubes the celery and place them in a salad bowl.
Cut the Kidders into small squares and put in bowl with  the celery.
In a small bowl, mix together olive oil, lemon and a pinch of salt.
Pour the oil-lemon mixture with the celery and Kidders. Mix well and refrigerate until it is time to eat.
