Made with whole cows’ milk, it is a product rich in calcium content, high in proteins, and low in fat. Primo Sale is lactose free since the production process involves the decomposition of this disaccharide into its component of galactose and glucose. The main characteristic of this cheese is its simplicity and unique flavor, similar to that of a glass of milk.

History: Many cheese-making cultures have basket or farmer cheeses easily made from fresh milk and ready for consumption without aging. Traditionally, Primo Sale is an Italian sheep milk cheese primarily produced in the Islands of Sicily and Sardinia. The name itself literally means “first salt” and is used to describe early stages of maturation. Primo Sale is also made utilizing cows’ milk in regions where cattle dairies are more prevalent, like Northern Italy. The resulting cheese flavor profile is sweet and milky without the tang of sheep milk. Salt is added to the milk along with cultures and rennet.
